The salt is roughly 98% sodium chloride, with trace minerals, mainly iron oxide, chiefly giving it the pink and amber banding. It is not manufactured, blended, or pressed. It’s cut out of the ground and shaped, which is why no two blocks look identical.
The property that makes it useful in a kitchen is thermal mass. Salt heats slowly, holds heat for a long time, and releases it evenly. A thin steel pan spikes and drops; a two-inch salt block heated to 500°F will still be searing thirty minutes after it comes off the heat. That’s what makes tableside cooking possible, and it’s the reason thickness matters more than surface area.

This is the benefit that surprises people. Salt transfers from the block into food through surface moisture, which means the seasoning is self-limiting. A dry-surfaced steak seared for three minutes picks up a light, even salting across the whole face, more consistent than you’d get from a hand-sprinkled pinch, and impossible to concentrate in one spot.
You don’t add salt. The surface is the salt.
A two-inch block preheated to 500°F stays in searing range for 20 to 30 minutes after it leaves the heat source. Practically, that means you can carry it to the table and cook in front of guests, or run a service without returning the block to the grill between portions.
It also cooks without hot spots. Salt’s slow, even conduction means no scorched center and cool edges.
Salt’s water activity is too low for bacteria to establish on it. That’s not marketing; it’s the same principle behind salt curing, which has preserved food for several thousand years.
The practical benefit is maintenance: a scrape and a damp wipe genuinely is sufficient. No detergent, no sanitizer, no dishwasher cycle.
Very few pieces of equipment cross that line. The same block that sears at 500°F chills to serve sashimi, and looks good enough on a table that it replaces a plate rather than hiding under one.

Yes, as a cooking and serving surface, they work exactly as described above. But this product category attracts a lot of inflated claims, and you should know which ones to ignore before you buy.
“84 trace minerals with health benefits.” Himalayan salt is around 98% sodium chloride. The remaining 2% is mostly iron, calcium, potassium, and magnesium in trace quantities. To get a nutritionally meaningful dose of any of them from salt, you would have to eat a genuinely dangerous amount of sodium. Cooking on a salt block does not meaningfully change your mineral intake. Buy one for the cooking and the presentation, not as a supplement.
“It purifies the air.” That claim belongs to salt lamps, and even there the evidence is thin. A salt block on a countertop is doing nothing to your air.
“Healthier than table salt.” It’s salt. Sodium is sodium. The differences are in texture, appearance, and the absence of anti-caking agents, real differences for a cook, irrelevant ones for your blood pressure.

Being straight about this matters, because the reason most people are disappointed by a salt block is that they bought it for the mineral claim and not for what it does well.
Two things ruin more first attempts than everything else combined. Get these right, and the rest is easy.
Start at 200°F (95°C) for 15 minutes. Raise the temperature in 100°F (55°C) increments every 15 minutes until the surface reaches 400–500°F (205–260°C). From cold, budget 30 to 45 minutes.
That is the most important instruction in this article.
Rushing it is the number one cause of cracked blocks. The outer salt expands faster than the core; the stress has nowhere to go, and the block splits, sometimes with an audible crack. A block heated patiently outlasts one heated fast by an order of magnitude.
The same rule governs cooling. Never move a hot block onto cold stone, a damp cloth, or a metal sink. Never run water on a warm block. Let it cool where it sits, which takes about two hours for a thick block.
Salt transfer depends on surface moisture and contact time. Two consequences:
Pat food dry before it touches the block. Water is the transfer medium; less moisture, less salt.
Season everything else afterward. Pepper, acid, fat, herbs: all fine, all after. Salt: never before.
Fatty and dense foods take on less salt than lean, wet, thin ones. Skin-on salmon seasons gently through the flesh side only. Sliced zucchini, which sheds water quickly, seasons fast and should come off sooner than instinct suggests.
Once the block is at temperature, cook directly on the surface. No oil, no seasoning, small batches; the block sheds heat as food goes on, so two portions at a time beats six.

Grilling and tableside searing works too, with one method change: put the block on the grate while the grill is still cold and bring both up together. Never set a room-temperature block on a hot grill.
On gas, lowest burner for 15 minutes, then step up to medium-high with the lid closed. On charcoal, build the coals to one side and start the block over indirect heat, moving it across only after 20–30 minutes. Never place a block directly over open flame; direct flame heats one spot far faster than the surrounding salt, and that differential is what breaks blocks.
Chill the block at least 2 hours in the refrigerator, or 30 minutes in the freezer. A two-inch block holds cold for roughly an hour on the table.
The same salt-transfer logic runs in reverse here: anything wet left sitting will pick up salt. Serve promptly, and put a shell, a leaf, or a small plate under anything delicate that has to wait.
Rinse and dry the block thoroughly after any curing use.
Not every block goes near a kitchen. Blocks and uncut salt rock also work as display and decor pieces, under a table setting, in a retail display, or built into a feature wall. These never need heating and last indefinitely.
For body and bath applications, uncut salt rock and bath salt products are the right format rather than a cut cooking block.
Salt dissolves in water. Every care rule follows from that single fact.
No soap. No soaking. No dishwasher, ever. Soap dissolves the surface and leaves residue in the salt, and a dishwasher will visibly shrink a block in a single cycle.
Salt pulls moisture out of humid air. A block stored next to a sink, dishwasher, or kettle will develop a damp film and eventually weep onto whatever it’s sitting on.
Store it on a dry shelf or in a cupboard away from steam, wrapped in a dry cloth or paper if your kitchen runs humid. If it does start sweating, wipe it dry and move it, the block isn’t damaged, the location is wrong.
